Spicy Avocado Toast

1 seeded white bloomer loaf cut into 2cm squares
3 medium avocados
Half a chilli finely chopped, plus slices to serve
1 tomato finely chopped
Half red onion finely chopped plus slices to serve
10g fresh coriander chopped plus extra to serve
Juice of 1 lime.


1. Toast the slices of bread in a griddle pan which gives them some nice black char marks.
2. In a bowl combine the avocados, fresh chilli, tomato, onion and coriander. Add the lime juice and then mash everything up with the back of a fork until it is quite smooth.
3. Add salt and pepper and then taste. Adjust the seasoning and spice level to suit you.
4 Spread the guacamole on the toast and serve with slices of chillies, thinly sliced red onion rings and a few coriander leaves.
This serves around 4 people.
